WHAT IS FOOD INTOLERANCE?

The term Food Intolerance (FI) means a reaction of the organism towards one or more foods, beverage, food additive or compound found in them. It is caused by the inability of our body to metabolize certain foods due to some specific enzyme deficiency, pharmacological effects or non-celiac gluten sensitivity. Therefore, our body will not be able to digest and assimilate certain substances. Symptoms related to this condition may be dermatological, respiratory, asthmatic, gastrointestinal, neurological and systemic; they affect the 15-20% of the population. They can occur with different times and severity depending on how much, and when, certain foods have been introduced in conjunction with other factors. The most frequent symptoms are certainly those related to digestive disorders, such as stomach ache, swelling, diarrhoea or constipation, which may be related to manifestations of fatigue, irritability, headaches and rashes. By avoiding or monitoring the intake of certain substances, metabolism can be activated correctly.
